NEW YORK STYLE CHEESECAKE

Vegan & Gluten-Free
· Gluten-free pie crust of choice (Bake as directed)
· 1 1/4 cup Kite Hill vanilla dairy-free yogurt
· 1/2 cup smooth cashew butter
· 6 oz Kite Hill vegan plain cream cheese
· 1 tsp vanilla extract
· 2 – 3 tsp lime juice (or lemon juice)
· 2 tbsp cornstarch (1.5 tbsp for a less set cheesecake)
· 2 – 3 tbsp organic coconut sugar
· 1/4 tsp salt
· 11 soft dates, pitted
Directions:
Preheat over to 350. Blend everything together until smooth. Pour into baked pie crust. Bake 25-35 minutes until the center is set. Cool completely.
